Gumbo is the official cuisine of Louisiana and is believed to have originated in the bayous sometime in the mid to late 1700’s. Back then, the ethnic mixture of French, Choctaw Indian, West African, Spanish and German settlers in the swamps of southern Louisiana used whatever meat was available or could be caught/killed/ and cooked; namely gator, nutria, wild hog, squirrel, fish or fowl, etc. This admixture of cultures utilized most if not all their culinary expertise to make these meats as palatable as possible using different spices and vegetables. “Cajun” and “Creole” recipes differ slightly but both try to “overhaul” the wild and gamey tastes of assorted meats into a delicious stew.
